The falafel are a kind of hash made from dried chickpeas soaked and crushed. It is a typical recipe Arabic cuisine, very nutritious and delicious.

Falafel ingredients

 

INGREDIENTS for the falafel

  • 500g dried chickpeas
  • 2 onions cut into quarters
  • 3 garlic cloves
  • 1 handful of fresh parsley
  • 1 handful of fresh coriander
  • 2 tablespoons cumin
  • 1 Cup of breadcrumbs with garlic and parsley
  • 1 tablespoon baking powder
  • 1 teaspoon of salt
  • black pepper to taste
  • 1/2 Cup of water
  • A little more breadcrumbs for preparation
  • Extra Virgin Olive Oil for frying (optional if you prefer to bake)

 

PREPARATION

  1. Soak the chickpeas the night before and drain them well the next day.
  2. In a blender or processor we put the chickpeas, the onions, the garlics, coriander and parsley. We grind until we get a dough. If it stays very dry, we start to pour the water so that everything can be crushed well., the approximate quantity will be half a cup, but you may need a little more or less, will depend on the hydration of the chickpeas.
  3. Add the rest of the ingredients and mix well. Keep in mind that the amount of spices is a little to your liking.
  4. Let the dough rest in the refrigerator for 1/2 hour at least.
  5. We form balls with the dough and we pass them through the breadcrumbs.
  6. We heat the oil in a pan and fry the balls, when they are golden, remove and leave on kitchen paper to absorb part of the oil.

Note: If you prefer, you can bake them to avoid frying, they are just as rich.

 

Falafel with yogurt sauce
 

INGREDIENTS for the yogurt sauce

  • 1 garlic clove
  • 1 handful of cilantro
  • 1 Cayena o 1/2 teaspoon cayenne powder
  • 3 lemon zest strips (only part yellow)
  • 250g of natural yoghurt, soy or greek, the one you like the most, but that is without sugar or sweeteners.
  • 1 pinch of salt

 

PREPARATION

  1. In a blender we chop the garlic well, the coriander, cayenne and lemon strips.
  2. Add the yogurt and salt and stir.
