Hummus lentils and eggplant

This week we bring you a lentil hummus and eggplant that you will love. Just two steps and presto!

 

INGREDIENTS

  • 1 Medium-sized eggplant
  • 400g cooked lentils
  • 1 garlic clove
  • Juice 2 small lemons
  • 60g of natural yoghurt sugarless
  • 30g water
  • 10g of sesame seeds
  • 70g AOVE (Extra Virgin Olive Oil)
  • 1/2 teaspoon cumin
  • 1 pinch of salt

PREPARATION lentil hummus and eggplant

  1. Eggplant cut longitudinally in half and each half wrap it in plastic wrap. We put it in the microwave 10 minutes.
  2. We put the eggplant and remaining ingredients in a food processor or food processor and grind for 1 minute at maximum speed.

And so, in just two steps, We get a spectacular and very healthy humus.
