If you want to prepare a good healthy cake for breakfast without using flour and it is very fluffy, this is your recipe. It has a texture that almost melts in your mouth, but it is a firm piece to hold it with hands.

  • 400g cooked chickpeas

  • 1 ripe banana
  • 50g AOVE (Extra Virgin Olive Oil)
  • 3 eggs
  • 10ml lemon juice

  • 2-3 heaping teaspoons ground cinnamon

  1. We put in a food processor or blender the dates, AOVE and bananas and grind a few seconds at medium-high speed.
  2. Add the remaining ingredients and grind a few minutes until a homogeneous mixture.
  3. Pour onto a baking sheet and optionally decorate with sheets of banana and a little cinnamon dusted.
