Rice croquettes

A different way to prepare croquettes! Very easy and without making bechamel or fritters. We've prepared with cheese and spinach, but in the same way as the croquettes of a lifetime, you can play with the ingredients to prepare different flavors.

 

INGREDIENTS for the croquettes

  • 200g Bomba rice
  • 4 handfuls of spinach
  • 2 cloves garlic, minced.
  • Äôve (Extra Virgin Olive Oil)
  • 100g cheeses to melt (at room temperature)
  • 100g grated Parmesan cheese (at room temperature)
  • Pepper to taste
  • Salt to taste
  • 1 egg
  • Bread crumbs

 

 

PREPARATION

  1. We cook the rice together with the water (2 parts of water to one of rice). The point of the rice has to be a little past and this is important to be able to form the croquettes well later. reserve.
  2. In a frying pan, We put a splash of EVOO to heat together with the garlic over medium-high heat. Just when the garlic begins to brown, add the previously chopped spinach and lower the heat to sauté. Once the spinach has a soft texture, remove from heat and reserve.
  3. In a bowl we are going to prepare the mixture with the rice, spinach and cheeses. Add the salt and pepper to our liking and mix with our hands.
  4. On the other hand we prepare a small bowl with a beaten egg and a plate with breadcrumbs.
  5. Let's assemble the croquettes!, we take a little of our rice mixture and form a ball, pressing so that it is compact and does not open later. We pass the ball through the egg and then through the breadcrumbs and if we want a thicker crust we go through the egg again and then through the breadcrumbs. We are placing the croquettes on a baking tray.
  6. With the oven preheated to 180ºC, we introduce the tray and cook until we see that the crust is golden brown. No need to turn around.
  7. We take out of the oven and let's eat these delicious snacks!
